New Cookbook and Nutrition Workshop Offered by NJ Dietician

Susan Greeley, MS, RD, has recently published her first book, Lighten Up!, the latest installment in the popular Cooking with Trader Joe’s Cookbook series, which feature recipes that incorporate convenient and specialty items sold at Trader Joe’s. Signed copies of the book will be included in Greeley’s upcoming nutrition workshop, “Lighten Up for Summer with Susan Greeley,” to be held Wednesday, June 6, 10am to noon, at the Elila Center in Berkeley Heights. 

Greeley is a registered dietitian of 17 years who has a nutrition consulting practice in Mountainside. As the mother of four young boys, Greeley understands the demands of a busy lifestyle, yet recognizes the need to maintain a consistent, nutritious diet. Greeley partnered with friend and fellow New Jerseyan Dan Komoda to photograph the recipes for the book.

Greeley’s cookbook is focused on using fresh healthy, ingredients found at Trader Joe’s to create meals that help reduce the waistline without feeling deprived. The book also includes a “Two-Week Challenge” to jump-start weight loss, a guide to good carbs that will curb cravings and reduce belly fat, and easy ways to boost metabolism. Gluten-free and vegetarian recipes are included.
